Kilberger, Adam ; Hejlová, Denisa (advisor) ; Houdek, Petr (referee)
This master's thesis deals with the challenges of the school meal system in the Czech Republic within the context of strategic communication. It illuminates the current issues of the school meal system, situating them within the context of strategic communication and relevant theoretical concepts. Utilizing quantitative analysis methods, the thesis explores the attitudes of more than 10,000 representative respondents, comprising both parents and diners, towards the school meal system. The principal findings suggest a strong positive correlation between the perceived satisfaction of diners and the overall satisfaction of parents with the school meal system. Furthermore, there is a significant influence of the satisfaction with the school canteen representatives' communication on the overall satisfaction of parents. Conversely, factors such as household income or parents' understanding of the rules governing the school meal system did not have as significant an impact on their satisfaction as initially expected. The concluding sections of the thesis formulate strategic recommendations aimed at improving parents' satisfaction with the school meal system and the overall condition of the system. A qualitative method was applied to collect the data using semi-structured interviews, observations and analysis of the documentation. For the practical part, 3 goals were chosen. The first objective was to focus on the suppliers of raw materials, including the frequency of supply and the quality of provided raw materials. The second objective was to evaluate the processing the ingredients into tasty and nutritionally balanced meals. The last goal was to map the current state of food and nutrition in school canteens from the perspective of raw material modesty. The results revealed that the raw materials are ordered every day, the vegetables are delivered 2-3 times a week, the meat basically every day and the durables once a week. As the school canteens check the freshness of the delivered raw materials. If some raw materials come in poor quality, the manager will return them to the supplier. Neither of the examined canteens complied with all nutritional recommendations and thus the required nutritional parameters were not met. In terms of tastiness of prepared meals, the school canteen II achieved better results. However, it should be mentioned that the canteens differed greatly in the amount of leftovers. From the provided documents, it was found that they try to have simple recipes and use as few ingredients as possible. However, but seasonings and higher amounts of salt are still part of the recipes.

Uplatnění regionální produkce ovoce a zeleniny ve školních stravovacích zařízeních Jihočeského kraje
FIALOVÁ, Daniela
The diploma thesis deals with the identification and evaluation of factors that affect the application of regional fruit and vegetable production in school catering facilities. The Czech Republic and the South Bohemian Region are not particularly self-sufficient in fruit and vegetable production. The opening of the market in the last three decades has made it possible to cover a large part of the demand for fruit and vegetables by importing completely new species for us, but gradually also common species, which are pushing the production of domestic growers out of the market. In addition to the economic impact, imports also have a negative impact on the environment, but also on employment and the loss of adequate self-sufficiency. The diploma thesis follows up on the bachelor's thesis, which sought out fruit and vegetable growers in the South Bohemian Region and found out the range of production and its application in school catering facilities. In this work, the need for fruit and vegetables in school canteens of the South Bohemian region and the potential of its coverage by regional producers is specified. The aim is to evaluate the factors influencing the application of regional fruit and vegetable production in school canteens and to suggest possible measures to improve the current situation. The questionnaire survey and controlled interviews with local growers show that the existing programs "School Fruit" and "Product and Food Map of the South Bohemian Region" do not sufficiently fulfill their functions. The relatively low competitiveness of suppliers of domestic production has its share in this. The improvement of the situation is hindered by the great fragmentation of producers, relatively small quantities and sometimes the quality and availability of production, lack of processing capacity, seasonality and lack of suitable storage space, product price and at the same time low ability to communicate, cooperate, abide by agreements and form stable relationships.

Theoretical knowledge, which is formulated in the theoretical part, were obtained from scientific and professional publications or periodicals, which are searched in databases of scientific and scholary literature. The actual part contains the results of filling the consumer basket in the fish commodity according to the standard at six primary school cafeterias, which are located in the Czech Republic and compares the results with the recommendations of the Decree of the Ministry of Education of the Czech Republic nr. 107/2005.
